White Bean Turkey Chili

Hearty, healthy, and flavorful, this ground turkey chili is made entirely on the Pit Boss grill using a cast iron dutch oven. By blending white beans with your broth base and using ground turkey instead of pork or beef, you get a creamy chili that is a leaner, lighter alternative to the traditional method.

Ingredients

  • 6 15.5 oz. cans cannellini (white) beans, rinsed
  • 1 qt. unsalted chicken broth
  • Oil
  • 1 1/2 lb. ground turkey
  • 1 onion, chopped
  • 8 garlic cloves, chopped
  • 1 1/2 lb. diced frozen green chilies
  • 3 tbsp salt
  • 1 1/2 tsp cumin
  • 1/4 tsp coriander
  • 1/2 oz. fresh oregano, chopped

Directions

  • Add 4 cans of rinsed beans and broth to a blender. Puree until smooth.
  • Preheat your grill or smoker to 450°F.
  • Open your grill's sear plate and place your cast iron on the bottom grate over the sear area. Allow to preheat for 5 minutes.
  • Coat the bottom of the cast iron with cooking oil, then add the ground turkey and chopped onions. Sauté for 4-6 minutes before adding the garlic. Then sauté for another 2-3 minutes.
  • Add leftover beans (2 cans), bean puree, green chilies, salt and spices to the cast iron.
  • Bring the chili to a simmer and cook for 25 minutes, stirring often. Pro Tip: You may have to adjust the sear plate to maintain a simmer.
  • Remove from the grill and serve immediately.
