BBQ Chicken Quarters

Sometimes what the heart needs is a simple, classic BBQ dish for those long summer nights spent in the backyard. These BBQ Chicken Quarters are seasoned, then smoked on the Pit Boss pellet grill with Mesquite pellets for a bite that's every bit as juicy as it is flavorful.

  • Using hardwood mesquite pellets, preheat your grill or smoker to 275°F
  • Pat the chicken completely dry with a paper towel. Lightly coat in duck fat, then season on all sides with BBQ Rub.
  • Place chicken skin-side up directly on the lowest grill grates. Smoke for 45-60 minutes, or until the internal temperature of the chicken reaches 155-160°F.
  • Then, increase the grill temperature to 375°F to crisp the skin.
  • Brush the chicken with BBQ sauce. Option to add some extra honey to your BBQ sauce if you like it sweeter.
  • Continue cooking for another 15-20 minutes, or until the internal temperature reaches 175° in the thigh.
  • Remove from the grill and let rest for 5-10 minutes before serving.
