Bananas Foster Pancakes

Take your breakfast to the next level with fluffy, golden pancakes topped with a rich Bananas Foster sauce. Using a premium pancake mix keeps the recipe simple while the buttery caramelized bananas, brown sugar, cinnamon, and a splash of dark rum create a restaurant-quality breakfast that's perfect for the griddle.

Ingredients

  • 1 box pancake mix
  • 3 ripe bananas, sliced
  • 1/2 cup Unsalted Butter
  • 3/4 cup dark brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp kosher salt
  • 1 tsp vanilla extract
  • 1/4 cup dark rum (optional)
  • 1/4 cup heavy cream
  • Chopped pecans
  • Powdered sugar

Directions

  • Preheat one zone of the Pit Boss Ultimate Griddle to medium heat (375°F). Place a small saucepan or cast iron skillet on a lower heat zone for the Bananas Foster sauce.
  • Prepare the pancake batter according to the package directions. Let the batter rest for 5 minutes before cooking.
  • Lightly grease the griddle and pour approximately ¼ cup of batter per pancake. Cook until bubbles form across the surface, then flip and cook until golden brown. Keep warm while preparing the remaining pancakes.
  • In the saucepan or cast iron skillet, melt the butter over medium heat. Stir in the brown sugar, cinnamon, and salt until smooth.
  • Add the sliced bananas and cook for 2 to 3 minutes, gently turning them until softened but still holding their shape.
  • Stir in the vanilla extract, heavy cream, and optional dark rum. If using rum, allow it to simmer for 1 to 2 minutes so the alcohol cooks off and the sauce thickens.
  • Stack three pancakes on each plate and generously spoon the warm Bananas Foster sauce over the top.
  • Finish with chopped pecans and powdered sugar if desired. Serve immediately while the sauce is warm.
