Leftover BBQ Chicken Pizza

  • 8 Servings
  • 10 minutes Prep Time
  • 30 minutes Cook Time

Leftover chicken doesn't have to mean boring chicken salads anymore. In this recipe, we combine pulled chicken with cheese and a pizza crust cooked right on your grill for the ultimate dinner meal to share with friends and family.

Cooking Method: This pizza can be made on any grill that can maintain a temperature of 350°F. We recommend using a pizza stone and preheating it to 375-400°F before using for best results.

Directions

  • Preheat your grill to 350°F and place your pizza stone inside to preheat.
  • Season leftover chicken with BBQ rub and BBQ sauce, set aside.
  • Roll out your dough into roughly 14" diameter.
  • Coat your pizza spatula with corn meal and lift and place the dough onto the spatula. (It's best to build your pizza on the spatula for easy transportation to the grill stone)
  • Coat the outside/crust of the dough with a light layer of olive oil, then season with GSP Rub (or salt, pepper, and garlic).
  • Assemble the pizza with pizza sauce, mozzarella cheese, and seasoned chicken.
  • Once the pizza stone has reached a preheated surface temperature of 375-400°F, place the assembled pizza carefully on the stone inside the grill.
  • Close the grill lid and bake for about 20-30 minutes or until the crust is cooked to your liking and the cheese has melted. Rotate the pizza with the spatula every 6-8 minutes to ensure even cooking.
  • Once done, remove from the grill and garnish with pickled onions and a drizzle of BBQ sauce. Slice into 8 pieces and serve while hot.

Recipe Note

Pro Tip: Use a surface thermometer like an Infrared Thermometer to determine the preheated temperature of your pizza stone!
