You can't get more classic than this when it comes to crowd-pleasing party food. This time, make your homemade pepperoni pizza on the pellet grill for a crust that's perfectly crispy and cheese that's perfectly melty— with a hint of wood-fired flavor.

Cooking Method: This pizza can be made on any grill that can maintain a temperature of 350°F. We recommend using a pizza stone and preheating it to 375-400°F before using for best results.

Ingredients

  • 24 oz. raw pizza dough
  • Corn meal
  • Olive oil
  • Pit Boss GSP Rub
  • 1/2 cup pizza sauce
  • 12 oz. mozzarella cheese, shredded
  • Pepperoni slices

Tools

Directions

  • Preheat your grill to 350°F and place your pizza stone inside to preheat.
  • Roll out your dough into roughly 14" diameter.
  • Coat your pizza spatula with corn meal and lift and place the dough onto the spatula. (It's best to build your pizza on the spatula for easy transportation to the grill stone)
  • Coat the outside/crust of the dough with a light layer of olive oil, then season with GSP Rub (or salt, pepper, and garlic).
  • Assemble the pizza with pizza sauce, mozzarella cheese, and pepperoni.
  • Once the pizza stone has reached a preheated surface temperature of 375-400°F, place the assembled pizza carefully on the stone inside the grill.
  • Close the grill lid and bake for about 20-30 minutes or until the crust is cooked to your liking and the cheese has melted. Rotate the pizza with the spatula every 6-8 minutes to ensure even cooking.
  • Once done, remove from the grill, slice into 8 pieces, and serve while hot.

Recipe Note

Pro Tip: Use a surface thermometer like an Infrared Thermometer to determine the preheated temperature of your pizza stone!
