Grilled Chicken Kabobs

Try these tasty and quick grilled chicken kabobs, perfect for a family dinner or backyard BBQ. Easily add your favorite veggies and seasoning to customize to your liking.

Ingredients

  • 3 chicken breasts, cut into 1-inch cubes
  • 2 cloves garlic, minced
  • 2 tbsp honey
  • 1 lb. button mushrooms, destemmed and halved
  • 1/2 cup olive oil
  • 1 red onion, quartered
  • 1 green bell pepper, cut into large chunks
  • 2 Tbsp Pit Boss Smoked Salt & Pepper Rub
  • 2 tbsp soy sauce

  • Large, shallow baking dish
  • Wooden Skewers
  • Meat thermometer

Directions

  • To make the marinade In a large bowl, combine the olive oil, soy sauce, honey, garlic and Smoked Salt & Pepper Rub. Add the chicken and mix well. When the chicken is covered completely, allow it to marinate for 2-12 hours.
  • In a large, shallow baking dish, soak the kabob skewers for a minimum of 2 hours and up to 12 hours.
  • Once the chicken has finished marinating and the skewers are finished soaking, drain the water from the skewers and remove the chicken from the marinade.
  • Preheat your grill to 350°F (175°C).
  • Onto the soaked skewers, thread a piece of chicken, followed by a piece of pepper, mushroom, and onion. Repeat until the skewers are full.
  • Grill the kabobs on the bottom rack of your preheated grill for 5 minutes on one side, then flip and grill for 5 more minutes or until the chicken reaches an internal temperature of 165°F. Remove from the grill and serve immediately.
