Directions
- Preheat grill or smoker to 275°F.
- Slice the pork belly into 1/2 inch by 2 inch cubes.
- Season all sides of the pork belly cubes with BBQ rub, then coat with sugar.
- Lay the seasoned and sugared pork belly cubes onto a roasting rack so none of the pieces touch. Drizzle with hot honey.
- Place the rack of pork belly onto the upper most preheated rack of your grill or smoker. Allow to smoke for 2 hours minimum, rotating the rack every 20 minutes to ensure an even cook.
- Remove from the smoker, drizzle or toss with more honey and BBQ rub as desired. Serve immediately!
