Grilled Shrimp with Avocado Puree

Move over shrimp cocktail, we've got something better. Cooked to perfection on the Pit Boss wood pellet grill and paired with a silky homemade avocado puree, this dippable appetizer is exactly what every summer cookout needs.

Ingredients

  • 2 lb. fresh shrimp, peeled and deveined
  • Oil
  • Pit Boss Hatch Chili Verde Rub
  • 2 Hass avocados
  • 1 small jalapeno
  • 1 clove garlic
  • Zest and juice of 2 limes
  • 2 tsp agave syrup/nectar
  • 2 tsp salt

Directions

  • Skewer shrimp, leaving some space in between each piece.
  • Brush the shrimp with oil on all sides, then season with Hatch Chile Rub. Set aside.
  • Preheat grill to 450°F
  • While grill is preheating, add avocado flesh, jalapeno, garlic, lime juice and zest, agave syrup, and salt to a blender or food processor. Blend until smooth. Set aside.
  • Once grill is preheated, place the shrimp skewers on the rack and cook until opaque/nontransparent, flipping as needed.
  • Remove from the grill and serve immediately with avocado puree.
