Grilled Shrimp Cocktail

You've had regular shrimp cocktail, but have you tried grilled shrimp cocktail? This party appetizer recipe gets a kiss of smoke from the pellet grill and a nice, seasoned char before being chilled and served with a homemade cocktail sauce.

Ingredients

  • 2 lb. fresh shrimp, peeled and deveined
  • Oil
  • Pit Boss Boss Rub
  • 1/2 cup ketchup
  • 1/4 cup chili sauce
  • 2 tbsp horseradish
  • Juice from 1/2 Lemon
  • 1/2 tsp Worcestershire sauce

Directions

  • Preheat grill to 450°F
  • Brush the shrimp with oil, then season with BBQ rub. Let rest for 10 minutes.
  • While shrimp is resting, combine ketchup, sauce, horseradish, lemon juice, and Worcestershire sauce in a small bowl. Mix to combine and store in the refrigerator.
  • Grill the shrimp on the lowest grill grate for 8-10 minutes, rotating often to ensure even coloring. The shrimp will be somewhat firm to the touch and no longer translucent, once done.
  • Remove shrimp from the grill and refrigerate uncovered until completely shilled.
  • Serve shrimp fresh out of the refrigerator with cocktail sauce. Enjoy!
