Grilled Peach and Goat Cheese Crostini

Grilled peach crostinis are an easy summer appetizer with sweet, smoky flavor. Topped with creamy goat cheese and fresh mint, they're a simple bite that's perfect for any Summer gathering. 

Ingredients

  • 3 ripe peaches
  • French baguette, sliced
  • 8-10 oz. goat cheese
  • 6-8 mint leaves, thinly sliced
  • Olive oil
  • Sea Salt

Directions

  • Preheat Pit Boss to 450°F
  • Toss the sliced bread in a bowl and coat with olive oil and season with sea salt
  • Slice the peaches into thin wedges
  • In a second mixing bowl, toss the peaches in olive oil
  • Place the peaches on the grill and develop grill marks on one side, remove from grill
  • Place the sliced bread on the grill, rotating often to ensure even toasting
  • Spread a small amount of goat cheese on each piece of grilled bread before topping with a grilled peach wedge
  • Garnish each crostini with sea salt and fresh mint, serve immediately
