Cast Iron Baked Brie

Our Baked Brie recipe is baked to perfection on the Pit Boss wood pellet grill and topped with a homemade pecan streusel. Served right out of a cast iron skillet, this delectable appetizer is great for the Holiday host or honored guest to bring with bread and crackers.

Ingredients

  • 1 16 oz. brie wheel
  • 2 tbsp butter, softened
  • 1/4 cup flour
  • 2 tbsp sugar
  • 2 tbsp brown sugar
  • 1/8 tsp cinnamon
  • 1/8 tsp salt
  • 1/2 cup pecans
  • 1 10x15 puff pastry
  • Honey

Directions

  • Preheat grill or smoker to 375°F.
  • Unwrap the wheel of brie and place in the freezer for 10-15 minutes.
  • In a small bowl, combine softened butter, flour, sugar, brown sugar, cinnamon, salt, and pecans. Press firmly together, then refrigerate.
  • On a clean surface, cut the sheet of puff pastry in half, then place both sheets in the bottom of the cast iron. Place the sheets at different angles to cover as much of the cast iron sides as possible.
  • Remove the brie from the freezer and carefully remove the top layer of rind with a knife. Place entire wheel in the cast iron on top of the puff pastry.
  • Roll in and tuck the excess puff pastry into the cast iron sides around the cheese.
  • Remove the streusel from the fridge and crumble over the top of the cheese.
  • Place the cast iron on the upper rack of your preheated grill and bake for 15-20 minutes, or until the top is golden brown and the pastry has cooked through.
  • Remove from the grill and top with honey. Serve with toasted bread or crackers.
