Grilled Surf & Turf Alfredo

Skip the overpriced Valentine’s Day dinner reservation and stay in instead. This recipe is the perfect date night activity to show off your BBQ chops with a meal that’s equal parts hands-on, romantic, and worth savoring slowly.

Cooking Method: This recipe calls for one person at the grill and the other person at the griddle. So grab your grill buddy and get cookin'!

Ingredients

  • 1 14-16 oz. New York strip steak
  • 3 5-7oz. lobster tails
  • Oil
  • Pit Boss Classic Steakhouse Rub
  • Pit Boss Boss Rub
  • 1/4 cup butter
  • 5 cloves garlic, chopped
  • 1 cup unsalted chicken broth
  • 2 cups heavy cream
  • 1 tbsp lobster base
  • 1/2 tsp Old Bay seasoning
  • 4 oz. wide egg noodles
  • 2-3 oz. fresh baby spinach
  • 12 cherry tomatoes, cut in half
  • 1/3 Cup Parmesan Cheese
  • 1/2 oz. fresh basil, chopped

Directions

  • Preheat your flat top gas griddle to high heat & preheat your grill to 500°F.
  • Remove the steak from its packaging and lightly coat with oil. Then season with Classic Steakhouse Rub.
  • Remove the lobster tails from the shell and split in half lengthwise. Lightly coat with oil and season with Boss Rub.
  • Add a griddle-safe pan and sauce pot to your hot griddle to preheat.
  • Add butter and garlic to the sauce pot until butter melts, then keep warm on the griddle. In the pan, add broth, cream, lobster base and Old Bay seasoning and stir well.
  • When the sauce starts to simmer and the lobster base dissolves, add the dried pasta.
  • Then, on your preheated grill, grill the seasoned steaks until they reach your desired internal temperature/doneness.
  • Remove the steak and while it's resting, grill the lobster tails. Baste them with the melted butter and garlic to keep from drying out.
  • Back on the griddle, add spinach to the sauce pan once the noodles are cooked through. Once wilted, add chopped tomatoes, basil, and parmesan cheese. Remove from the heat immediately.
  • Thinly slice the steak. Plate a serving of pasta, then add your sliced steak and half of the lobster.
