Pit Boss Patty Melt

This classic American hot sandwich is made even better when done the Pit Boss way! First, onions are smoked until tender and sweet, then patties are grilled with real wood-fired flavor. Assembled on griddled bread with homemade sauce for a recipe that's great any time of year.

Ingredients

  • 2 medium yellow onions, sliced
  • Oil
  • 4 lb. ground beef
  • 24 slices of thick sourdough bread or Texas toast
  • 24 slices white cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 1 tbsp horseradish
  • 1 tsp smoked paprika
  • 1/2 tsp hot sauce
  • Butter
  • Pit Boss Bold Burger Rub

Directions

  • Preheat your grill to 250°F
  • In a small mixing bowl, add sliced onions and add just enough oil to lightly coat the onion pieces. Season and toss with BBQ rub (or garlic, salt, and pepper) and spread seasoned onions on a cookie sheet.
  • Place sheet of onion on the top rack of your grill and smoke for 1.5 hours. Mix every 15-20 minutes to ensure even cooking.
  • Remove onions from the grill and raise the temperature to 500°F.
  • Form 12 patties from ground beef (or use premade patties) and season with Bold Burger BBQ rub (or garlic, salt, and pepper) on both sides.
  • Add seasoned patties to the bottom rack of your grill and grill until they reach your desired doneness. Then, remove from the grill and allow them to rest.
  • In a small bowl, combine mayo, ketchup, horseradish, paprika and hot sauce. This will be your patty melt sauce.
  • Using a griddle plate on your grill or an independent flat top griddle, griddle the bread on both sides in melted butter.
  • Assemble the patty melts by placing a slice of cheese on each piece of toasted bread, then sandwich with smoked onions, homemade sauce and a patty. Serve immediately!
