Directions
- Start by preheating your Pit Boss smoker to 300°F. Also begin to heat up your Pit Boss Griddle to a medium-high heat.
- Place the leftover brisket in an aluminum pan covered with foil and allow it to heat through. Meanwhile, generously coat the griddle surface with oil.
- Once the griddle is hot, throw down the crinkle-cut fries and spread them out flat. Season the fries with Pit Boss Bold Burger Rub.
- Turn the fries every few minutes to ensure all sides are cooking evenly. Remove from the griddle once the fries look crispy and golden brown, around 10-12 minutes.
- Remove the brisket from the grill and finely chop.
- Place the fries into a flat aluminum pan. Top with the cheese and the chopped leftover brisket before placing it back onto your Pit Boss smoker.
- Cook for 5-10 minutes, or until the cheese is melted and lightly bubbling.
- Remove from the grill and drizzle on the sour cream and BBQ sauce. Topped with the chopped chives and serve!
