Leftover Brisket Loaded Fries

Crispy griddled fries loaded with smoky brisket, cheese, sour cream, and BBQ sauce, it doesn't get much better than this! This American comfort food is quick and easy to make, so try it out for the next gameday or anytime you need a fast and flavorful snack!

  • Start by preheating your Pit Boss smoker to 300°F. Also begin to heat up your Pit Boss Griddle to a medium-high heat.
  • Place the leftover brisket in an aluminum pan covered with foil and allow it to heat through. Meanwhile, generously coat the griddle surface with oil.
  • Once the griddle is hot, throw down the crinkle-cut fries and spread them out flat. Season the fries with Pit Boss Bold Burger Rub.
  • Turn the fries every few minutes to ensure all sides are cooking evenly. Remove from the griddle once the fries look crispy and golden brown, around 10-12 minutes.
  • Remove the brisket from the grill and finely chop.
  • Place the fries into a flat aluminum pan. Top with the cheese and the chopped leftover brisket before placing it back onto your Pit Boss smoker.
  • Cook for 5-10 minutes, or until the cheese is melted and lightly bubbling.
  • Remove from the grill and drizzle on the sour cream and BBQ sauce. Topped with the chopped chives and serve!
