Directions
- Preheat Pit Boss Ultimate Griddle to medium heat.
- Place leftover barbacoa on the griddle and add a small amount of beef broth to reheat and keep the meat moist. Stir occasionally until warmed through.
- Combine shredded pepper jack and mild cheddar cheese.
- Sprinkle a layer of cheese directly onto the griddle in a circle slightly larger than your tortilla.
- Place a tortilla directly on top of the melting cheese and press gently. Allow the cheese to crisp and form a golden crust.
- Flip the tortilla so the cheese crust is facing up, then add a portion of barbacoa to the center.
- Fold the tortilla in half and allow it to warm through for another 30-60 seconds.
- Remove from the griddle and top with diced white onion and chopped cilantro.
- Finish with crumbled cotija cheese, table salsa, and a drizzle of chipotle sauce if desired.
- Serve immediately with lime wedges on the side.
