These Barbacoa Street Tacos take classic street tacos to the next level. Crispy, golden cheese forms the base of each tortilla while tender, smoky barbacoa brings the flavor. Finished with fresh onion and cilantro, these tacos deliver bold, authentic taste straight off the Pit Boss griddle.

Ingredients

  • 1 lb. Barbacoa
  • Beef broth
  • 10-12 corn tortillas
  • 8 oz. pepper jack cheese
  • 8 oz. mild cheddar cheese
  • 1/2 White Onion, Diced
  • Fresh cilantro, chopped
  • Cotija cheese, crumbled
  • Table salsa
  • Chipotle crema
  • Lime wedges

Directions

  • Preheat Pit Boss Ultimate Griddle to medium heat.
  • Place leftover barbacoa on the griddle and add a small amount of beef broth to reheat and keep the meat moist. Stir occasionally until warmed through.
  • Combine shredded pepper jack and mild cheddar cheese.
  • Sprinkle a layer of cheese directly onto the griddle in a circle slightly larger than your tortilla.
  • Place a tortilla directly on top of the melting cheese and press gently. Allow the cheese to crisp and form a golden crust.
  • Flip the tortilla so the cheese crust is facing up, then add a portion of barbacoa to the center.
  • Fold the tortilla in half and allow it to warm through for another 30-60 seconds.
  • Remove from the griddle and top with diced white onion and chopped cilantro.
  • Finish with crumbled cotija cheese, table salsa, and a drizzle of chipotle sauce if desired.
  • Serve immediately with lime wedges on the side.
