Directions
- Preheat your Pit Boss grill to 275°F.
- Once your grill is up to temp, place an empty Dutch oven directly on the grill grates to heat up. Option to open your grill's sear plate.
- Coat pork in flour and melt butter in preheated Dutch oven. Once butter is melted, add pork and sauté until light golden brown.
- Once you have sautéed your pork, add the garlic and onion, then reduce the heat to medium by closing you grill's sear plate and sweat the vegetables until they are translucent in color.
- Then add the stock, cilantro, oregano, cumin, chilies, coriander, canned tomato, hominy, and salsa and reduce the liquid by 1/3. This will take about 30 minutes, stirring often.
- Remove from the heat and seasoning with salt. Garnish with cheese and cilantro and enjoy!
