Directions
- Fire up your Pit Boss on SMOKE mode to 250°F - 275°F
- To prepare your ribs, remove the membrane and trim any excess fat or silverskin.
- Season both sides of the ribs with Mango Magic and Hatch Chile Verde Rub.
- Once the smoker is up to temp, place the ribs on an upper rack and allow to smoke for 1 1/2 hours.
- After smoking for 1 1/2 hours pull the ribs off of the grill and increase the temperature to 300°F.
- Place the ribs meat-side down on a large piece of aluminum foil. Lift the sides of the foil to create a border around the ribs. Add butter tabs and mango juice into the foil before wrapping tightly. Place back on the grill and braise for an additional hour.
- To prepare the glaze, add mangoes, honey, apple cider vinegar, lime juice, salt, and habaneros to a blender. (Remove the seeds of the habanero pepper to decrease the spice level.) Blend until smooth and glossy.
- After braising for an hour, remove the ribs from the grill again and unwrap the foil. Brush on a generous amount of the mango habanero glaze and return to the grill, unwrapped, for an additional 10-15 minutes to allow the glaze to get tacky.
- Pull the ribs off of the grill and allow to rest for 10 minutes before slicing and serving!
