Mango Habanero Ribs

Sweet, spicy, and smoky with a tropical twist—these Mango Habanero Ribs are bursting with flavor and ready for your next summer BBQ. Smoked low and slow on the Pit Boss, then braised and glazed to juicy perfection. After trying these, you'll never want ribs any other way!

  • Fire up your Pit Boss on SMOKE mode to 250°F - 275°F
  • To prepare your ribs, remove the membrane and trim any excess fat or silverskin.
  • Season both sides of the ribs with Mango Magic and Hatch Chile Verde Rub.
  • Once the smoker is up to temp, place the ribs on an upper rack and allow to smoke for 1 1/2 hours.
  • After smoking for 1 1/2 hours pull the ribs off of the grill and increase the temperature to 300°F.
  • Place the ribs meat-side down on a large piece of aluminum foil. Lift the sides of the foil to create a border around the ribs. Add butter tabs and mango juice into the foil before wrapping tightly. Place back on the grill and braise for an additional hour.
  • To prepare the glaze, add mangoes, honey, apple cider vinegar, lime juice, salt, and habaneros to a blender. (Remove the seeds of the habanero pepper to decrease the spice level.) Blend until smooth and glossy.
  • After braising for an hour, remove the ribs from the grill again and unwrap the foil. Brush on a generous amount of the mango habanero glaze and return to the grill, unwrapped, for an additional 10-15 minutes to allow the glaze to get tacky.
  • Pull the ribs off of the grill and allow to rest for 10 minutes before slicing and serving!
