Charred Chipotle Pork Kabobs

These pork tenderloin kabobs are addictive! The perfect bite with spicy marinated pork, onion, and the fresh cilantro lime crema! Cooked on the Phoenix Kettle Grill, they have a little kiss of charcoal flavor! You have to give these a try! 

Ingredients

  • 3-4 oz. chipotle puree
  • 1/2 cup apple cider vinegar
  • 3 tbsp avocado oil
  • 1 clove of garlic, chopped
  • 1 1/2 tbsp dried oregano
  • 1 tbsp honey
  • 4 lb. pork tenderloin
  • 3 medium red onions, chopped
  • Cilantro lime crema

Directions

  • MARINADE: Add the chipotle puree, apple cider vinegar, avocado oil, garlic, dried oregano, and honey into a blender and blend until smooth
  • ASSEMBLE THE KABOBS: Dice the pork tenderloin into large 2" cubes. Chop the red onions into equal-size chunks. Start to skewer your pork and onions, alternating 1 piece of pork then 3 pieces of onion until skewers are filled.
  • COOK: Preheat your grill to 300°F. Place your skewers on the grill and rotate often. Remove from the grill when the pork reaches an internal temperature of 140°F. Rest for 5-7 minutes.
  • SERVE: Plate your skewers before drizzling on the cilantro lime crema and enjoy!
