Directions
- MARINADE: Add the chipotle puree, apple cider vinegar, avocado oil, garlic, dried oregano, and honey into a blender and blend until smooth
- ASSEMBLE THE KABOBS: Dice the pork tenderloin into large 2" cubes. Chop the red onions into equal-size chunks. Start to skewer your pork and onions, alternating 1 piece of pork then 3 pieces of onion until skewers are filled.
- COOK: Preheat your grill to 300°F. Place your skewers on the grill and rotate often. Remove from the grill when the pork reaches an internal temperature of 140°F. Rest for 5-7 minutes.
- SERVE: Plate your skewers before drizzling on the cilantro lime crema and enjoy!
