Directions
- Preheat your grill or smoker to 350-375°F
- Cut each potato into 6 equal size wedges, then add to a bowl with oil and thyme. Coat with BBQ rub and paprika, to taste.
- Evenly space the wedges onto a rack or sheet, or place directly on the upper rack of your grill/smoker.
- Roast until fork tender, about 20-25 minutes (depending on the size of your potatoes).
- Remove from the grill and serve while hot!
