Roasted Potato Wedges

Whether you call them potato wedges, JoJos, or steak fries, there's no denying that these are a classic side dish that everyone loves. These potatoes are first sliced and seasoned before being roasted on the wood pellet grill for maximum flavor. 

Produce Tip: The larger the potato, the longer the cook time! This recipe is based off of 4 large russet potatoes weighing 10-12 oz. each. Your cook time may vary depending on the size of your potatoes.

Directions

  • Preheat your grill or smoker to 350-375°F
  • Cut each potato into 6 equal size wedges, then add to a bowl with oil and thyme. Coat with BBQ rub and paprika, to taste.
  • Evenly space the wedges onto a rack or sheet, or place directly on the upper rack of your grill/smoker.
  • Roast until fork tender, about 20-25 minutes (depending on the size of your potatoes).
  • Remove from the grill and serve while hot!
