Directions
- Preheat your Pit Boss grill to 250°F
- (Optional) Place wings on a wire rack and leave in the fridge overnight to draw out any moisture.
- Dry your wings out as much as possible by dabbing with a paper towel.
- Place the wings in a Ziploc bag, and add baking powder (1/2 a teaspoon for every 12 wings) and your seasoning of choice. We recommend the Pit Boss Hot Honey Chipotle Rub.
- Shake the bag to coat the wings as evenly as possible.
- Place the wings back on the wire rack, and apply an even layer of seasoning to all wings.
- Place the wings in your preheated grill, and cook for 45 minutes, flipping every 15 minutes to ensure even cooking.
- After 45 minutes, increase your smoker's temperature to 400°F, and move the wings over the sear plate to finish cooking and crisp up the skin.
- Remove from the smoker, serve hot, and enjoy!
