Grilled Tandoori Chicken

Tandoori chicken is a popular Indian dish consisting of chicken marinated in yogurt, spices, and lemon juice. In this easy-to-follow recipe, we take classic tandoori marinated chicken to the grill to be infused with the wood-fired flavor of the Pit Boss. 

 

 

Ingredients

  • 8-10 chicken leg quarters
  • 3 tbsp vegetable oil
  • 1 1/2 cups plain yogurt or buttermilk
  • zest and juice of 2 lemons
  • 3 tbsp chopped garlic
  • 2 tbsp fresh ginger, minced
  • 1 tsp salt
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp cayenne
  • 1 tbsp garam masala
  • 1 tbsp smoked paprika

Directions

  • Add oil, yogurt or buttermilk, lemon juice and zest, garlic, ginger, and all spices into a mixing bowl and allow to rest for 30 minutes for the flavors to combine.
  • Once rested, add 1 3/4 cups of the mixture to a bowl or large bag with the chicken, reserving the rest for dipping. Optional: Let the chicken rest in the marinade, covered and refrigerated.
  • Preheat your grill to 375°F
  • Place the marinated chicken on the preheated grill grates. Rotate every 4 to 6 minutes to ensure even color and cooking.
  • Once the chicken legs reach an internal temperature of 165°, (in the thickest part of the meat) remove from grill and allow to rest for 10 minutes before serving.
  • Serve with a side of the marinade, for dipping.
