White Cheddar Beer Cheese Dip

This White Cheddar Beer Cheese Dip is the MVP of all appetizers! Rich, smooth, and packed with cheesy flavor, it's the perfect companion for a pretzel crisp, veggie, or tortilla chip. Try this recipe out for your next tailgate or backyard BBQ and wait for the compliments to come flooding in! 

Ingredients

  • 2 lbs. white American cheese
  • 1/4 cup butter, softened
  • 24 oz. beer (lager recommended)
  • 8 oz. smoked white cheddar
  • 5 cloves garlic, chopped
  • 6 oz. fresh spinach
  • 1 1/2 tsp smoked paprika
  • 1 tsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 lb. cooked bacon, chopped
  • 2 tsp horseradish
  • Pretzel Crisps, serving suggestion
  • French fried crispy onions

Directions

  • Preheat your Pit Boss to 350°F and place the Dutch oven directly over the flame broiler.
  • Add butter and garlic to the Dutch oven and cook for 2-3 minutes.
  • Add in the beer and allow it to reduce by half, about 5 minutes.
  • Dice the cheese into small cubes and add them to the beer mixture. Stir every 2-3 minutes until the cheese is melted and smooth. Stir in the spinach and remove from the heat.
  • Stir in bacon bits, paprika, Worcestershire, Dijon, and horseradish. Mix well to combine and serve while hot!
