A classic childhood favorite with a Pit Boss twist! This simple one-pot recipe comes together in under an hour, making it perfect for a quick, weeknight family meal. Cooked to perfection on your Pit Boss for that bold wood-fired flavor, this beefy sandwich is so good, you’ll keep coming back again, and again! 

Ingredients

  • 93% lean ground beef
  • 1/2 medium sized onion, minced
  • 1 red bell pepper, minced
  • 1/2 cup chopped picked jalapeno
  • 1/4 cup whole butter
  • 1 can roasted corn
  • 8 cloves of garlic, minced
  • 2 Tsp Worcestershire Sauce
  • 3 tsp chili powder
  • 3 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 tsp dried oregano
  • 1 1/2 cups fire roasted salsa
  • 1 1/2 cups enchilada sauce
  • 6 oz. can tomato paste
  • 1 tsp salt
  • 12 burger buns
  • 12 slices of cheese
  • tortilla strips, garnish

Directions

  • Preheat your Pit Boss pellet grill to 350°F
  • Place a large cast iron over the open sear plates and allow to heat up with the grill.
  • Cook the ground beef until just browned before adding in the remaining ingredients (excluding the cheese and burger buns). Allow the mixture to come to a simmer and stir every 5-6 minutes.
  • After simmering for 30 minutes, remove the cast iron from the grill and allow it to cool and thicken.
  • To assemble the sandwiches, scoop the ground beef mixture onto toasted buns and add a slice of your preferred cheese to each sandwich.
  • Serve, and enjoy!
