  • 1 cup Italian bread crumbs
  • 4 tsp garlic paste or minced garlic
  • 26 oz. tomato sauce
  • 8-10 fresh basil leaves
  • 1 tbsp red pepper flakes
  • Salt, to taste
  • 2 hoagie or Italian rolls
  • Pit Boss Bold Burger Rub

Tools

  • Cast Iron Skillet
  • Mixing bowl

Directions

  • Start by preheating your Pit Boss to 225°F
  • Place your cast iron skillet on the grill and allow it to heat up with the grill.
  • To make the meatballs, combine ground beef, eggs, minced onion, Italian bread crumbs, 2 tsp roasted garlic paste, and Pit Boss Bold Burger Rub. Mix well until all of the ingredients are evenly incorporated. Form the ground beef mixture into 1.5 inch balls.
  • Place the meatballs into the preheated cast iron skillet. Allow the meatballs to sear and smoke for 15 minutes. Flip the meatball halfway through to ensure even cooking.
  • Once the meatballs are browned on all sides, add tomato sauce, salt, red pepper flakes, and 2 tsp garlic paste into the skillet. Gently stir to coat all of the meatballs in sauce.
  • Increase the temperature to 300°F and allow the meatballs to simmer for 20 minutes uncovered.
  • Once the meatballs reach an internal temperature of 165°F remove them from the grill.
  • Place the rolls on the top rack of the grill to heat up and get toasty.
  • Open the rolls and add 2-3 meatballs per sandwich. Top with extra sauce and shredded mozzarella cheese. Place the subs into an aluminum pan and place it back on the grill.
  • Once the cheese is nice and melty, remove from the grill and top with freshly chopped basil.
  • Enjoy!
