Directions
- Set your gas flat top griddle to medium heat.
- Sauté your peppers and onions for 3-4 minutes until they soften.
- Add your chopped or sliced leftover brisket. Cook for an additional 3-4 minutes until the brisket is warmed through.
- Turn one burner to low heat and move hot peppers, onions, and brisket to the low heat side.
- Add both tortillas to the hotter side of the griddle and warm for 1-2 minutes on each side. Flip, then add cheese to the tortillas.
- Split the onion, pepper, and brisket mixture between the two quesadillas.
- Fold in half and allow to toast for 3-4 minutes on each side or until golden brown and cheese is completely melted.
- Remove from the griddle and cut each quesadilla into 4 equal size pieces.
- Serve with salsa and favorite condiments!
