These Adobo Chicken Wings are packed with flavor and grilled on the Pit Boss until perfectly crispy! All the rich, tangy, and garlicky notes of classic Adobo are packed into a bite-sized package that’s perfect for sharing. 

Whether you’re hosting a backyard BBQ, heading to a tailgate, or just craving something new, these wings bring a fun twist to a beloved classic. Crispy on the outside, tender on the inside, and marinated in that rich adobo flavor, these are guaranteed to satisfy your whole crew! 

Ingredients

  • 2 dozen chicken wing sections
  • 1 oz. dried New Mexico chile pods, no stems
  • 2 1/2 oz. dried ancho chile pods, no stems
  • 1 tbsp minced ginger
  • 1 tsp cumin
  • 1 tbsp salt
  • 1/2 tsp black pepper
  • 3/4 cup apple cider vinegar
  • 2 garlic cloves
  • 1 small shallot, chopped
  • 2 tbsp canola oil
  • Pit Boss GSP Rub

Directions

  • Preheat your grill to 450°F
  • Prepare the chiles by removing the seeds and soaking them in hot water for 2-3 minutes.
  • Then, drain the water and add the soaked chiles to a food processor with ginger, cumin, salt, pepper, vinegar, garlic, oregano, agave, shallots, and oil. Blend until smooth
  • In a large bowl, mix the wings with your homemade adobo chile marinade until coated evenly. Reserve some marinade for after grilling. Season marinated wings with Pit Boss GSP rub, as desired.
  • Grill the wings on the lower rack, rotating often with tongs until the wings reach an internal temperature of 165°F.
  • Remove from the grill and toss with more marinade and softened butter. Serve while hot and enjoy!
