Directions
- Preheat grill or smoker to 375°F.
- Mince the roasted chiles and add to a bowl with shredded cheese, cumin, oregano, and salt. Mix to combine.
- Lay out sheets of puff pastry and evenly distribute the cheese and chile mixture between the two sheets.
- Roll each side of the pastry into the middle, so that it forms a 'heart' shape.
- Cute the rolls into 3/4" thick pieces. Lay the pieces flat on a baking sheet with space in between each piece.
- Refrigerate the palmiers for 4-5 minutes before cooking.
- Place the sheets on the upper rack of the grill and bake the palmiers for 10-15 minutes, or until golden brown.
- Remove the trays from the grill and carefully remove the baked palmiers from the trays with a spatula. Allow to cool for 4-5 minutes before serving.
