Directions
- In a bowl or large plastic bag, add the skirt steak, salt, pepper, olive oil, lime juice, and orange juice. Seal the bag or add a tight plastic cover over your bowl. Let this marinate for at least 30 minutes.
- Preheat your Pit Boss Pellet Grill to 350°F degrees.
- Grill the steak for 3-4 minutes per side for a medium rare, or to your desired doneness.
- Remove from the grill and allow the steak to rest for 5-10 minutes.
- While your meat is resting, heat up your tortillas on a griddle or hot skillet for about 30 seconds per side until soft and lightly browned.
- After resting, thinly slice your skirt steak against the grain for tender pieces.
- To assemble your tacos, layered the sliced carne asada onto your tortillas. Then spoon on the cilantro lime crema, salsa, and top with pickled red onions and avocado slices.
- Serve with lime wedges and enjoy!
