Follow our step-by-step guide: all you need is your bucket kit, an 11–14 lb turkey, water, and your Pit Boss pellet grill or smoker. We recommend apple blend hardwood pellets for a mild smoke flavor.
At least one week before, purchase and thaw your turkey in the refrigerator—allow one day per 4–5 lb of weight.
Combine the brine blend with 4 cups water in a large pot; bring to a boil for 5 minutes. Remove from heat, add 1 gallon cold water, and refrigerate until fully cooled.
Pour cooled brine over the turkey until submerged. Seal the bag and refrigerate for 30–60 minutes per pound, or overnight.
Rinse the turkey inside and out, then pat dry. Drizzle with olive oil and rub poultry seasoning on and under the skin. Insert the probe into the thickest part of the breast, then cook at 275 °F for 3.5–4 hours or until the breast and thigh reach 165 °F.

Remove the turkey from the grill or smoker, let rest for 20–30 minutes, carve, and enjoy!
