Directions
- Start by preheating your Pit Boss to 350°F.
- Cut the pineapple into medium-sized chunks and sprinkle with brown sugar on both sides.
- Place the pineapple chunks directly over the flame broiler and allow it to develop grill marks, about 5 minutes.
- Take the pineapple off of the grill and directly into a cocktail shaker. Muddle well until the pineapple is broken down and the juice has been released.
- Add ice, light rum, orgeat, lime juice, and triple sec into the shaker. Put the lid on the shaker and shake well for 30 seconds.
- Double-strain the cocktail into a glass with fresh ice. Add the dark rum float and garnish with grilled pineapple chunks, pineapple leaves, and maraschino cherries.
