Directions
- Preheat your Pit Boss grill or smoker to 350°F.
- Using butcher's twine, truss the rib loin in the center and on both sides. Doing so will ensure even cooking and keep the cap from separating from the eye.
- Rub with oil of choice and evenly coat with your favorite BBQ rub. We recommend the Pit Boss Prime Beef Rub for a savory and smoky touch of flavor.
- Place on the center rack and roast until it reaches an internal temperature of 110-115°F.
- Remove from your grill and allow to rest for 15-20 minutes before removing the trusses and slicing.
