Baked beans are a staple barbecue side dish, but these Coke Apple Pork Baked Beans are in a class all their own. Put your leftover smoked pork to good use, combining it with sausage, bacon, Coca Cola, apple pie filling and a few other ingredients – all mixed into a pan of baked beans. Sure, you've probably never added apples and Coke to baked beans before, but don't knock it until you try it. Like pineapple on pizza, it just works.

Ingredients

  • 1/2 can Coca-Cola
  • 4 slices bacon
  • 2 cans baked beans, 27 oz.
  • 1/2 Cup Pit Boss Kentucky Whiskey Barrel BBQ Sauce
  • 1 lb smoked pork
  • 1/2 lb ground pork sausage, cooked
  • 1 can apple pie filling, finely chopped
  • 1 medium onion, chopped
  • 1/2 green pepper, diced
  • 1/2 cup brown sugar
  • 2 tbsp Worcestershire sauce
  • 2 tbsp mustard
  • 1 tsp chili powder
  • 1 Tbsp Pit Boss Homestyle Pork Rub

Directions

  • Preheat your pellet grill to 325°F.
  • In a large cast iron pan, over medium heat, start browning the bacon. Before the bacon is done, add onions and peppers to saute in the bacon grease.
  • Add the Coca-Cola, baked beans, BBQ sauce, pork, apple pie filling, brown sugar, Worcestershire, mustard, and chili powder. Mix well until combined.
  • Transfer pan to Pit Boss grill and cook uncovered for 30 minutes.
  • Cover the pan and cook for an additional 60 minutes, stirring occasionally.
  • Serve, and enjoy!
