Directions
- First, preheat your Pit Boss Grill to 400°F.
- While your grill is heating up, coat the chicken legs/thighs on all sides with a thin layer of olive oil, followed by your favorite BBQ rub. For this recipe, we used Pit Boss Maple Chipotle BBQ Rub.
- Once the chicken has been seasoned, place it, breast side up, directly on the grill grates. We recommend placing it on the top rack of your smoker if possible.
- Cook to an internal temperature of 165°F, rotating every 10 mins for even color.
- Remove from the smoker and let rest for 10-15 mins.
- Once your chicken has rested, prepare your meal prep containers by portioning 1 cup of steamed rice, followed by 5 oz. steamed broccoli, and 1 chicken leg and thigh.
- Make sure all contents in your containers have cooled completely before covering and placing in the fridge. You can then store this meal prep recipe in the refrigerator for 3-5 days, reheating as needed.
- To reheat, place the chicken and broccoli meal prep container into the microwave and reheat for 1-2 minutes uncovered, in a microwave-safe container.
