Directions
- Preheat your Pit Boss grill to 350°F.
- Using scissors, trim the ribs and backbone of the chicken away from the breastbone.
- Using a boning knife, trim excess skin away from top of the chicken breast.
- Also using your boning knife, carve around the wishbone on both sides.
- Using the scissors, cut the point of the wishbone away from the breastbone. The wish bone should be free enough to pull out and remove.
- Rub the outside of the chicken breast with your oil of choice, season with salt and pepper, then coat evenly with herbs and chopped garlic.
- Place on the center rack of your grill and roast to an internal temperature of 155°F, rotating every 20-25 minutes so the skin colors evenly.
- Remove from grill and allow to rest for 15 minutes.
- Using a clean boning knife, cut down the center on both sides of the breastbone, and continue to follow the bone in short strokes until the breast falls away from the breastbone.
- Slice your turkey breast and place in a serving dish. Enjoy!
